Easy Cucumber Pickles

Makes 4 small servings
From Japanese Cookbook for Beginners


1 Tbsp sugar
1 Tbsp shoyu
1 Tbsp rice vinegar
1 Tbsp water
1 small garlic clove, minced
1 scallion, white and green parts, chopped
2 Persian cucumbers, cut into 1-inch pieces

In a medium bowl, whisk together the sugar, shoyu, vinegar, water, garlic, and scallions in a medium bowl until the sugar has dissolved. 

Add cucumbers and toss to coat with dressing. Cover and let marinate for at least a couple hours before serving.
