From the Archives: Mixed Rice with Pork and Bamboo Shoots

For anyone who thinks rice is a little boring, I urge you to make this Mixed Rice with Pork and Bamboo Shoots. This maze gohan (mixed rice) is one of my favorites for its ease and short ingredient list. But more importantly it delivers in flavor. Today is the last day of my month-long challenge [...]

From the Archives: Kuwayaki Pork Donburi

What’s great about this Kuwayaki Pork Donburi is how the sweet and sticky sauce clings to the pork and the way the shiso perfumes each bite. When I saw the recipe in one of my favorite cookbooks, I was immediately drawn to the photo. It looked amazing. So, you can imagine I was even more [...]

From the Archives: Tuna + Avocado Donburi

For today’s look back, I want to re/introduce you to Tuna + Avocado Donburi. This was one of those one-bowl meals that sprung out of necessity and surprised me when it turned out as good as it did. I love that the ingredients are few and the method is simple, and yet you get a [...]

Chicken Soboro

Chicken soboro is ground chicken cooked in shoyu, mirin, and sugar. It’s layered on top of rice and sprinkled with sake-cooked scrambled egg on top. It’s great for bentos and you could also use it as a filling for musubi without the egg. I made this the other day and my stepdaughter loved it, so [...]

Kinoko Gohan

Savory rice with mushrooms and just a hint of ginger. My mom made this when we visited over the holidays and it reminded me how much I love this dish. There are 3 types of mushrooms used here: shimeji, shiitake, and eringi. First, the mushrooms are cooked in dashi and strained. Then, you take this [...]

Tuna Chirashi with Snow Peas

I would’ve never thought pairing sumeshi (vinegared sushi rice) and curry powder could deliver such a great combination. The flavors in this unconventional chirashi are so delicately nuanced, I couldn’t help but feel it exemplifies a Japanese sensibility. I’m not always in the mood for curry-flavored foods because I expect it to be overwhelming, but [...]

Crispy Rice with Miso and Leeks

I love burnt rice. It’s hard to top something as simple and perfect as yakionigiri, but this recipe shows that the slightest effort makes something entirely different and delicious in its own right. I saw a photo of this recipe in the Japanese magazine, Kyouno Ryouri Beginners. This “beginners” series focuses each issue on one [...]

Fried Rice with Crispy Garlic and Ginger

Mark Bittman has a way of making simple things look really delicious. I watched as he effortlessly whipped up ginger fried rice and I needed to make this immediately. The crunchy flecks of garlic and ginger, and using the garlic and ginger-infused oil for the fried rice sounded perfect.

Takikomi Gohan with Chicken

I made takikomi gohan for my roomate when I was in college and she thought it was the best thing since sliced bread. She raved about it, but I was a little embarrassed since all I did was pick up a package at the store, wash the rice, empty the pouch of prepared vegetables, and [...]
